Would finding parts or repairs be an issue with a 2014 Holden Commodore?
The biggest potential repair cost for this make and model would probably be the replacement of the engine’s timing chains. These were of poor design and quality from the start and many Commodore V6s of this era have suffered stretched chains which require replacement. It’s not a cheap job, either, and you should budget for at least a couple of thousand dollars. While the vehicle in question has covered low kilometres, the health or otherwise of its timing chains will be down to how well it’s been serviced over the years. Any skipped servicing makes it a ticking time bomb in this regard. But even well maintained vehicles have experienced the same problem.
Holden Commodore 2014: Will it appreciate in value?
You’ll be waiting quite a number of years for the value to climb to any degree, so if you’re selling it it’s probably best to get out of it now. But if you like it why not keep it and enjoy it? But if you do, keep it for those special days and don’t drive it daily.
Remember though, you have to keep it in pristine condition and well maintained, so don’t park it and forget about it.

Given that the warranty is going to expire in the coming year I would press your dealer to fix the problems that are causing you concern. They appear to have fixed the leaking radiator, but the air-conditioning and gearbox issues should be fixed. If the dealer cannot, or is unwilling to fix them escalate the problem by talking directly to Holden's customer service.
Convert a Commodore SV6 LPG-only to petrol?
It could be, but it would be a big and expensive job, not something I would recommend. If you want a petrol version, it would be much simpler to go and buy one.

You certainly haven’t had a good run with it. I have heard of transmissions being replaced, but not many, and I haven’t heard of widespread trouble with the other issues you have had.
Holden Commodore 2014: Do I need an extended warranty?
For starters, the extra warranty is from the dealer who sold you the car, it's not from Holden, and so it's not a factory warranty as such. I generally don't believe these extra warranties are of value; dealers sell, or occasionally give them to you to make more money or to sweeten a deal. The Holden factory warranty is sufficient to cover whatever might occur in that first three-year period.
Opinion of 2014 Commodore International
Overall the Commodore is a decent car, but the V6 does have a few problems that can show up over the longer term. The cam timing chain does stretch, which affects the valve timing, and the engine can run roughly as a result. Replacing the chain is quite expensive. It can also use oil, so check to see if there have been any oil consumption issues with the car you are looking to buy.
